Ingredients

Main
  • 4 boneless pork chops about 1/2 inch thick
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup vegetable oil for frying
  • 2 cups cooked rice preferably Japanese short-grain
  • 1/4 cup dashi broth
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 2 green onions sliced for garnish
  • 4 large eggs for topping

Equipment

  • Large skillet or frying pan
  • Shallow dish for breading
  • Sharp knife
  • Whisk
  • Rice cooker or pot for cooking rice

Method

  1. Start by tenderizing the pork chops with a meat mallet to an even thickness.
  2. Place flour in one shallow dish, whisk the eggs in another, and add panko breadcrumbs to a third.
  3. Dredge each pork chop in flour, dip in the egg, and finally coat with panko.
  4. Heat vegetable oil in a skillet over medium heat. Fry the breaded pork for about 4-5 minutes on each side until golden brown and cooked through.
  5. In another pan, combine dashi, soy sauce, and mirin, and bring to a simmer.
  6. Gently crack the eggs into the simmering sauce and let them cook until just set.
  7. Place a generous scoop of rice in each serving bowl.
  8. Top with sliced pork and pour the sauce with eggs over everything.
  9. Finish with sliced green onions for a pop of color and flavor. Serve immediately while hot.

Notes

For extra crunch, let the breaded pork sit for 10 minutes before frying.
