  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

  • Parchment paper (optional)
  • Electric mixer or whisk
  • Spoon for scooping dough

Method

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the peanut butter, granulated sugar, egg, vanilla extract, baking soda, and salt; mix until smooth.
  3. Using a spoon, scoop the dough into 1-inch balls.
  4. Line a cookie sheet with parchment paper and place the dough balls 2 inches apart.
  5. Gently flatten each dough ball with a fork, creating a crisscross pattern.
  6. Bake in the preheated oven for 10 to 12 minutes, until the edges are set.
  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  8. Transfer the cookies to a wire rack to cool completely or serve warm.

Notes

Don't skip the cooling time on the baking sheet, as this helps the cookies set perfectly.
