  • 2/3 cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 1 cup marshmallow creme
  • 1 teaspoon vanilla extract

Method
 

  1. Line an 8x8 inch pan with parchment paper or foil, leaving overhang on two sides.
  2. Melt 1 cup butter in a medium saucepan over medium-low heat for about 3 minutes, stirring occasionally and ensuring it does not brown.
  3. Add 2/3 cup unsweetened cocoa powder and stir vigorously for 30 seconds until no lumps remain.
  4. Remove pan from heat and add 1 cup marshmallow creme all at once; stir constantly for about 30 seconds until fully blended.
  5. Add 3 cups powdered sugar one cup at a time, stirring well after each addition until mixture is smooth and thick.
  6. Stir in 1 teaspoon vanilla extract and mix for 15 seconds until evenly distributed and mixture is glossy.
  7. Pour fudge mixture into prepared pan and spread into an even layer, working quickly before it begins to set.
  8. Let fudge cool at room temperature for 15 minutes, then refrigerate for at least 2 hours until completely firm.
  9. Lift fudge from pan using parchment overhang, peel off paper, and cut into 16 squares with a hot knife dipped in hot water and dried between cuts.

Notes

Store fudge in an airtight container in the refrigerator and let sit at room temperature for 30 seconds before serving for the perfect melt-in-your-mouth texture.
