Ingredients

Main
  • 2 pounds of beef flank steak or sirloin works well
  • 1/2 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 1 tablespoon liquid smoke
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 tablespoon brown sugar optional, for sweetness

Equipment

  • Dehydrator
  • Sharp knife
  • Cutting board
  • Mixing bowl
  • Measuring cups and spoons
  • Ziplock bags or airtight containers

Method

  1. Slice the beef into thin strips, about 1/4 inch thick.
  2. In a mixing bowl, combine soy sauce, Worcestershire sauce, liquid smoke, garlic powder, onion powder, black pepper, and brown sugar. Whisk until the sugar dissolves.
  3. Add the beef strips to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, or overnight.
  4. After marinating, remove the beef from the marinade and let it drain. Pat the strips dry with paper towels.
  5. Place the beef strips in a single layer on the dehydrator trays, leaving space between them.
  6. Set your dehydrator to 160°F (70°C) and let the beef dehydrate for 4 to 6 hours, checking for doneness at 4 hours.
  7. Once dried, allow the jerky to cool completely.
  8. Store in ziplock bags or airtight containers.

Notes
