Ingredients

Main
  • 4 chicken thighs bone-in, skin-on for juiciness
  • 2 tablespoons olive oil to help the spices stick
  • 2 teaspoons allspice for that signature flavor
  • 1 teaspoon thyme fresh or dried
  • 1 teaspoon cinnamon adds warmth
  • 1 teaspoon nutmeg for depth of flavor
  • 1 teaspoon cayenne pepper for heat
  • 1 teaspoon garlic powder for savory goodness
  • 1 teaspoon onion powder adds sweetness
  • 1 tablespoon brown sugar balances the spice
  • Salt and pepper to taste
  • Juice of 1 lime for brightness
  • 2 green onions chopped (for freshness)

Equipment

  • Large mixing bowl
  • Whisk or fork
  • Oven-safe baking dish
  • Meat thermometer
  • Plastic wrap or lid for marinating

Method

  1. In a large mixing bowl, combine olive oil, allspice, thyme, cinnamon, nutmeg, cayenne pepper, garlic powder, onion powder, brown sugar, salt, pepper, lime juice, and chopped green onions.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Marinate for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C).
  4. Place the marinated chicken thighs in an oven-safe baking dish, skin side up.
  5. Bake for 35-45 minutes, or until the internal temperature reaches 165°F (75°C).
  6. For the last 10 minutes, baste the chicken with the juices in the dish.
  7. If you prefer extra crispy skin, broil the chicken for an additional 2-3 minutes.
  8. Remove the chicken from the oven and let it rest for 5-10 minutes before serving.

Notes

Serve with classic rice and peas, grilled corn on the cob, or fresh mango salsa.
