  • 2 jalapenos finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon cayenne pepper
  • 1 tablespoon brown sugar
  • 1 tablespoon olive oil

Equipment

  • Large mixing bowl
  • Sharp knife
  • Cutting board
  • Sausage stuffer or casings (optional)
  • Skillet or grill

Method

  1. Start by gathering all your ingredients and chopping the jalapenos and garlic.
  2. In a large mixing bowl, combine the ground pork, salt, black pepper, cayenne pepper, smoked paprika, and brown sugar.
  3. Fold in the shredded cheddar cheese, chopped jalapenos, and minced garlic.
  4. If using casings, stuff the mixture into the casings and twist into links. If not, shape the mixture into patties or logs.
  5. Heat a skillet over medium heat or preheat your grill.
  6. Add the sausages to the skillet or grill and cook for about 15 minutes, turning occasionally.
  7. Use a meat thermometer to ensure they reach an internal temperature of 160°F.
  8. Remove the sausages from the heat and let them rest for a few minutes before serving.

Notes

For extra flavor, let the sausage mixture chill in the fridge for an hour before cooking.
