Ingredients

Main
  • 1 lb ground beef or turkey
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper chopped
  • 2 cans 15 oz each kidney beans, drained and rinsed
  • 1 can 15 oz diced tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup beef broth
  • 1 tablespoon olive oil

Equipment

  • Instapot or pressure cooker
  • Cutting board
  • Knife
  • Measuring cups and spoons
  • Wooden spoon or spatula

Method

  1. Set your Instapot to the sauté setting and add olive oil.
  2. Sauté the chopped onion, bell pepper, and minced garlic for about 3-4 minutes until they soften.
  3. Add the ground beef or turkey to the pot. Cook until browned, stirring occasionally for about 5 minutes.
  4. Sprinkle in the chili powder, cumin, salt, and black pepper. Stir to coat the meat and veggies.
  5. Add the drained kidney beans and diced tomatoes with their juice.
  6. Add the beef broth into the pot, scraping any browned bits from the bottom.
  7. Seal the lid and set the Instapot to pressure cook on high for 20 minutes.
  8. Once cooking is complete, let the pressure release naturally for 10 minutes.
  9. Carefully release any remaining pressure and open the lid.
  10. Stir the chili and serve hot with your favorite toppings.

Notes

For an even richer flavor, let the chili sit for a few hours or overnight; it gets better with time.
