Ingredients

Main
  • 1 pound ground pork
  • 1/4 cup brown sugar
  • 1 tablespoon minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon soy sauce
  • 1 tablespoon vinegar
  • 1 teaspoon paprika optional

Equipment

  • Mixing bowl
  • Measuring cups and spoons
  • Sausage stuffer or piping bag (optional)
  • Frying pan or skillet
  • Spatula

Method

  1. In a mixing bowl, combine ground pork, brown sugar, minced garlic, salt, black pepper, soy sauce, vinegar, and paprika if using.
  2. Cover the mixture and let it marinate in the refrigerator for at least 30 minutes.
  3. Using your hands, form the mixture into small sausage shapes about 4 inches long.
  4. Heat a frying pan over medium heat and add a little oil.
  5. Place the sausages in the hot pan, ensuring not to overcrowd them.
  6. Cook the sausages for about 10 minutes, turning them occasionally.
  7. Once cooked, remove the sausages and place them on a paper towel-lined plate to drain excess fat.
  8. Serve the longganisa warm alongside garlic rice and a fried egg.

Notes

For extra flavor, let the longganisa rest in the refrigerator overnight before cooking.
