Ingredients

Main
  • 1 ½ cups warm water 110°F to 115°F
  • 1 packet active dry yeast 2 ¼ teaspoons
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • ⅓ cup baking soda
  • 1 large egg beaten (for egg wash)
  • Coarse sea salt for topping
  • 2 tablespoons melted butter for brushing

Equipment

  • Mixing bowl
  • Whisk
  • Rolling pin
  • Baking sheet
  • Parchment paper
  • Large pot
  • slotted spoon
  • Pastry brush

Method

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until it becomes frothy.
  2. Add flour and salt to the yeast mixture. Stir until a dough forms, then knead for about 5 minutes until smooth and elastic.
  3. Place the dough in a greased bowl and cover it with a damp cloth. Let it rise in a warm place for about 30 minutes, or until it doubles in size.
  4. While the dough rises, bring 10 cups of water and the baking soda to a boil in a large pot.
  5. Once risen, punch down the dough and divide it into 8 equal portions. Roll each piece into a long rope and twist it into a pretzel shape.
  6. Carefully place each pretzel into the boiling baking soda bath for about 30 seconds.
  7. Transfer the pretzels to a parchment-lined baking sheet. Brush them with beaten egg and sprinkle with coarse salt.
  8. Bake at 425°F for 12 to 15 minutes, until golden brown.
  9. Brush the pretzels with melted butter as soon as they come out of the oven.

Notes

These pretzels are best enjoyed fresh, served with cheese sauce or honey mustard.
