Ingredients

  • 2 pounds shrimp shells from peeled shrimp
  • 1 medium yellow onion halved
  • 2 stalks celery roughly chopped
  • 2 medium carrots roughly chopped
  • 3 garlic cloves smashed
  • 3 to 4 fresh thyme sprigs
  • 2 bay leaves
  • 8 to 10 black peppercorns
  • 6 cups water
  • Salt to taste

Method
 

  1. Rinse shrimp shells under cold running water to remove any debris.
  2. Heat a 6-quart stockpot over medium-high heat and dry-roast shrimp shells, stirring for 2 to 3 minutes until they turn bright pink.
  3. Add halved onion, chopped celery, chopped carrots, and smashed garlic to the pot.
  4. Pour in 6 cups cold water to cover the shells and vegetables by about 1 inch.
  5. Bring the mixture to a rolling boil over high heat, then skim off any foam that rises to the surface.
  6. Reduce heat to low and add thyme sprigs, bay leaves, and peppercorns; simmer gently with occasional bubbles.
  7. Let the stock simmer undisturbed for 30 to 40 minutes, tasting at 30 minutes for flavor.
  8. Remove from heat and cool for 5 minutes, then strain through a fine mesh strainer lined with cheesecloth into a clean container.
  9. Cool to room temperature, season with salt to taste, then refrigerate for up to 4 days or freeze for up to 3 months.

Notes

Stock keeps for up to 4 days refrigerated and up to 3 months frozen. Freeze in ice cube trays or flat bags for easy portioning.
