Ingredients

  • 2 cups fresh lime juice from about 16-20 limes
  • 1 cup water
  • 3/4 cup granulated sugar
  • 1/2 cup orange liqueur Cointreau or Triple Sec
  • 1/4 cup fresh lemon juice from about 2 lemons
  • Zest of 2 limes
  • 1/4 teaspoon sea salt

Method
 

  1. Combine water and sugar in a medium saucepan over medium heat. Stir constantly until the sugar completely dissolves and the mixture turns clear, about 3-4 minutes. Avoid boiling the mixture.
  2. Remove the saucepan from heat and immediately add the lime zest. Stir well and let it steep for 5 minutes while the mixture cools slightly.
  3. While the syrup cools, juice your limes and lemons. Roll each citrus fruit firmly on the counter before cutting to break down internal membranes and release more juice.
  4. Strain the juice through a fine mesh strainer to remove seeds and pulp.
  5. Pour the lime juice, lemon juice, and orange liqueur into a large glass jar or bottle. Add the cooled simple syrup (with the zest still in it) and the sea salt.
  6. Strain the entire mixture through your fine mesh strainer to remove the lime zest pieces. Seal the container and shake vigorously for 30 seconds to fully incorporate all ingredients.
  7. Pour a small amount into a glass and taste it. The mix should taste slightly sweeter than you want the final margarita since tequila will balance it out. If it's too tart, add another tablespoon of simple syrup. If it's too sweet, add more fresh lime juice in small increments.
  8. Refrigerate the mix for at least 2 hours before using. This allows all the flavors to marry and the mixture to reach optimal serving temperature.
  9. Store in an airtight glass container in the refrigerator for up to 3 weeks. Label it with the date. Shake well before each use.

Notes

To make a classic margarita, combine 2 ounces of tequila with 3 ounces of this mix and 1 ounce of fresh lime juice, then shake with ice. The mix can be frozen for up to 3 months. Use room temperature limes and roll them firmly before juicing to extract maximum juice. The mix should taste slightly sweeter than desired since tequila and ice will mellow it out.
