- Rinse 2 cups pitted dates under cool water to remove any residue.
- Combine rinsed dates and 1.5 cups filtered water in a medium saucepan.
- Bring mixture to a gentle boil over medium-high heat, stirring occasionally, about 2-3 minutes.
- Reduce heat to medium and simmer for 15-18 minutes, stirring every few minutes until dates break down and liquid reduces by about one-quarter.
- Remove pan from heat and let the mixture cool for 5-10 minutes until warm but not hot.
- Transfer the mixture to a blender and blend on high for 60-90 seconds until completely smooth.
- Optionally, strain the syrup through a fine mesh strainer into a bowl, pressing with a spoon to remove any fibers.
- Let the syrup cool to room temperature and transfer it to clean glass jars for storage; it will thicken as it cools.
Notes
Store the syrup in glass jars in the refrigerator for up to one month; warm gently and whisk in water to adjust consistency if needed.
