  • Salt and pepper to taste
  • Seasoning of choice garlic powder, paprika, etc.

Equipment

  • Large bowl

Method

  1. Preheat your grill to medium heat or preheat the oven to 400°F (200°C).
  2. Chop the potatoes, onion, and mixed vegetables into bite-sized pieces for even cooking.
  3. In a large bowl, combine ground beef, diced potatoes, chopped onion, and mixed vegetables.
  4. Add olive oil, salt, pepper, and your chosen seasonings; mix until ingredients are evenly coated.
  5. Lay out a 12-inch sheet of aluminum foil and place one-quarter of the mixture in the center.
  6. Fold the foil over the ingredients and seal tightly to lock in moisture.
  7. Place the foil packets on the grill or in the oven and cook for 30 minutes, turning packets halfway through for even cooking.
  8. Remove the packets from heat and let them rest for 5 minutes before opening to avoid hot steam.
  9. Carefully open each packet, watching for escaping steam, and serve the Hobo Dinners hot.

Notes

For extra flavor, marinate the beef before assembly or sprinkle cheese on top of each packet during the last 5 minutes of cooking.
