Main
  • 4 large eggs
  • 1 cup black beans drained and rinsed
  • 1/2 cup shredded cheese such as cheddar or pepper jack
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onion
  • 1 teaspoon ground cumin

  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Equipment

Method

  1. Dice the bell peppers and onion.
  2. In a mixing bowl, whisk together the eggs, cumin, chili powder, salt, and pepper.
  3. Heat a large skillet over medium heat and add the diced onion and bell peppers. Sauté until soft, about 3-4 minutes.
