Ingredients

Main
  • 1 cup chocolate chips milk or semi-sweet
  • 2 cups chow mein noodles
  • 1 cup peanuts or any nuts of your choice
  • 1/2 cup butterscotch chips optional
  • 1/2 cup shredded coconut optional

Equipment

  • Microwave-safe bowl
  • Spatula or spoon
  • Cookie sheet or parchment paper

  1. In a microwave-safe bowl, combine the chocolate chips and butterscotch chips if using. Microwave on high for 30 seconds, stir, and continue in 15-second intervals until melted and smooth.
  2. Add the chow mein noodles to the melted chocolate mixture. Stir gently to coat the noodles evenly without breaking them.
  3. Fold in the peanuts until they are well distributed throughout the mixture.
  4. If using shredded coconut, gently fold it in now.
  5. Line a cookie sheet with parchment paper.
  6. Using a spoon, drop mounds of the mixture onto the prepared cookie sheet.
  7. Place the cookie sheet in the refrigerator for about 30 minutes to chill and set.
  8. Once set, remove the haystacks from the refrigerator and serve them on a platter or store them in an airtight container.
