Ingredients

Main
  • 1 lb chicken thighs boneless and skinless
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup pineapple juice
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp sesame oil
  • 1/2 tsp black pepper
  • 1/2 pineapple sliced into rings
  • 1/4 cup green onions chopped for garnish

Equipment

  • Grill or grill pan
  • Mixing bowl
  • Whisk or fork
  • Measuring spoons
  • Cutting board
  • Knife

Method

  1. In a mixing bowl, whisk together the soy sauce, brown sugar, pineapple juice, minced garlic, grated ginger, sesame oil, and black pepper.
  2. Add the chicken thighs to the marinade, ensuring they are completely coated and marinate for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade, allowing excess liquid to drip off, and place the chicken on the grill.
  5. Cook the chicken for about 6-7 minutes on each side.
  6. While the chicken cooks, place the pineapple rings on the grill and grill for about 2-3 minutes on each side until caramelized.
  7. Ensure the chicken reaches an internal temperature of 165°F.
  8. Remove the chicken from the grill and let it rest for 5 minutes.
  9. Slice the chicken and serve it with grilled pineapple, garnished with chopped green onions.
