Halupki (Cabbage Rolls)

These Eastern European cabbage rolls filled with ground meat and rice are the kind of dish that tastes like a home-cooked hug, and they're surprisingly simple to make at home.

Ingredients

  • 1 large head of green cabbage
  • 1 pound ground beef or ground pork, or a 50/50 mix
  • 1 cup cooked white rice cooled
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 egg beaten
  • 2 tablespoons tomato paste
  • 1 can 28 ounces crushed tomatoes
  • 1 can 8 ounces tomato sauce
  • 1 cup beef or vegetable broth
  • 2 tablespoons sugar
  • 1 tablespoon apple cider vinegar
  • 2 bay leaves
  • Salt and pepper to taste

Method
 

  1. Remove any yellowed or damaged outer leaves from the cabbage head and discard them, then place the whole head in a large pot of boiling salted water.
  2. Boil the cabbage head for 8-10 minutes until the outer leaves start to soften and peel away easily; use tongs to remove the head and place it on a cutting board, then gently peel away each softened leaf as it cools.
  3. In a large mixing bowl, combine the ground meat, cooked rice, diced onion, minced garlic, salt, black pepper, paprika, and beaten egg; mix gently with your hands until just combined.
  4. Place a cabbage leaf on a cutting board with the stem end facing you, put about 2-3 tablespoons of filling near the stem, fold the sides in, then roll tightly away from you to create a compact bundle.
  5. In the same pot used for blanching, combine the tomato paste with 2 tablespoons of oil or butter from your stovetop and stir for 1 minute to caramelize the paste slightly.
  6. Add the crushed tomatoes, tomato sauce, beef or vegetable broth, sugar, apple cider vinegar, and bay leaves to the pot; stir well and let the sauce simmer for 5 minutes to meld flavors.
  7. Carefully place each cabbage roll seam-side down into the simmering sauce, nestling them snugly together in a single layer.
  8. Bring the sauce back to a gentle simmer, reduce heat to low, cover the pot, and let the rolls cook for 30-35 minutes until the cabbage is tender and the filling is cooked through.

Notes

Pro Tip: If you’re short on time, assemble the rolls ahead and refrigerate them unbaked for up to 24 hours, then add 10 extra minutes to the cooking time since they’ll start cold.
