Ingredients

  • 6 slices bacon chopped
  • 1 large yellow onion diced
  • 4 cloves garlic minced
  • 1.5 pounds collard greens cleaned and chopped
  • 1 cup chicken broth
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 tablespoon apple cider vinegar optional but recommended
  • Pinch of cayenne pepper for extra heat, optional

Method
 

  1. Place the chopped bacon in a large skillet over medium heat and cook until crispy, stirring occasionally for about 5 to 7 minutes.
  2. Transfer the bacon to a paper towel-lined plate, leaving about 2 tablespoons of bacon fat in the skillet.
  3. Add the diced onion to the hot bacon fat and cook over medium heat, stirring frequently, for about 3 to 4 minutes until translucent and soft.
  4. Stir in the minced garlic and cook for about 1 minute until fragrant, watching carefully to prevent browning.
  5. Add the collard greens to the skillet and stir constantly for about 2 to 3 minutes until they begin to wilt.
  6. Pour in the chicken broth and add red pepper flakes, salt, black pepper, and garlic powder, stirring well to combine.
  7. Reduce heat to medium-low and simmer uncovered for about 10 to 12 minutes, stirring occasionally, until the greens are tender.
  8. Taste the greens and stir in the apple cider vinegar, then add the crispy bacon pieces back to the skillet and mix to combine.
