  • 2 celery stalks diced
  • 2 cloves garlic minced
  • 1 cup frozen peas
  • 1 tablespoon tomato paste
  • 1 cup Guinness stout
  • 1 cup beef broth
  • 4 cups mashed potatoes prepared
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Equipment

  • Large skillet
  • Pot for boiling potatoes
  • Mixing bowl
  • Oven-safe baking dish
  • Potato masher

Method

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the ground lamb or beef, breaking it up with a spoon, and cook until browned.
  4. Add the diced onion, carrots, and celery to the skillet and sauté until softened, about 5-7 minutes.
  5. Stir in the minced garlic and tomato paste, cooking for another minute.
  6. Carefully add the Guinness to the skillet, scraping up any browned bits.
  7. Pour in the beef broth and Worcestershire sauce, then bring to a simmer and cook for about 10 minutes.
  8. Add the frozen peas and stir them in.
  9. Transfer the meat mixture to an oven-safe baking dish and spread the mashed potatoes on top.
  10. Bake for 20-25 minutes until the potatoes are golden and slightly crisp.

Notes

For an extra crispy topping, broil the shepherd's pie for the last 2-3 minutes of baking.
