Ingredients

Main
  • 2-3 pounds tri tip roast
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 4 cloves garlic minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon smoked paprika
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary optional

Equipment

  • Grill (gas or charcoal)
  • Meat thermometer
  • Sharp knife
  • Cutting board
  • Mixing bowl
  • Whisk or fork

Method

  1. In a mixing bowl, whisk together the olive oil, red wine vinegar, garlic, Worcestershire sauce, smoked paprika, salt, black pepper, onion powder, and rosemary.
  2. Place the tri tip in a resealable bag or a shallow dish and pour the marinade over it. Seal the bag or cover the dish, then refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat your grill to medium-high heat, around 400°F.
  4. Take the tri tip out of the marinade and let any excess drip off.
  5. Place the tri tip on the grill and sear for about 5-7 minutes on each side.
  6. Using a meat thermometer, check for doneness. Aim for 130-135°F for medium-rare.
  7. Once done, remove the tri tip from the grill and let it rest for 10 minutes.
  8. Slice the tri tip against the grain into thin slices.
