Ingredients

Main
  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 whole wheat pita breads
  • 1 cup romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber sliced
  • 1/2 cup tzatziki sauce

Equipment

  • Grill or grill pan
  • Measuring cups and spoons
  • Mixing bowl
  • Knife
  • Cutting board
  • Tongs

Method

  1. In a mixing bowl, combine olive oil, garlic powder, paprika, salt, and pepper to make the marinade.
  2. Add the chicken breasts to the marinade, coat evenly, and let sit for at least 15 minutes.
  3. Preheat the grill or grill pan over medium-high heat (about 400°F).
  4. Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F.
  5. Remove the chicken from the grill and let it rest for 5 minutes to retain juices.
  6. Slice the rested chicken into strips.
  7. Warm the pita breads on the grill for about 1 minute per side.
  8. Stuff each pita with sliced chicken, romaine lettuce, cherry tomatoes, cucumber, and drizzle with tzatziki sauce.
  9. Serve the grilled chicken pita immediately for best flavor and texture.

Notes

Let the chicken rest after grilling for juiciest bites. Store leftovers in an airtight container in the refrigerator for up to 3 days.
