Ingredients

Main
  • 4 cups grape juice freshly pressed or store-bought
  • 1/4 cup lemon juice
  • 1 package fruit pectin like Sure-Jell
  • 5 cups granulated sugar
  • 1/2 teaspoon butter optional, to reduce foaming

Equipment

  • Large pot
  • Measuring cups and spoons
  • Food mill or fine mesh strainer
  • Canning jars and lids
  • Candy thermometer
  • Funnel (optional)

Method

  1. Sterilize your canning jars and lids.
  2. If using fresh grapes, crush them and cook with a little water. Strain the mixture through a food mill or fine mesh strainer to extract the juice.
  3. In a large pot, combine the grape juice and lemon juice. Stir in the fruit pectin and mix well.
  4. Bring the pot to a boil over medium heat, stirring constantly.
  5. Once boiling, add the granulated sugar all at once. Stir until fully dissolved, and bring back to a rapid boil.
  6. Boil for 1-2 minutes, then check the consistency by dropping a spoonful on a cold plate.
  7. Using a funnel, carefully fill the sterilized jars with the hot jelly, leaving about 1/4 inch of headspace.
  8. Process the jars in a boiling water bath for 5-10 minutes.

Notes

Always check the seals after processing; if a lid pops up, it's not sealed and should be refrigerated.
