- In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix thoroughly.
- In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; lumps are okay.
- Preheat your griddle or skillet to medium heat at about 350°F (177°C).
- Lightly grease the skillet with butter or oil.
- Pour about 1/4 cup of batter for each pancake onto the hot skillet.
- Cook until bubbles form on the surface and the edges are set, about 2-3 minutes.
- Flip the pancakes gently and cook for another 1-2 minutes, until golden brown.
- Remove pancakes from the skillet and serve immediately with toppings of choice.
Notes
Make sure your griddle is hot enough before adding batter to achieve a golden crust. Let the batter rest for a few minutes to aerate for fluffier pancakes.
