  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Method
 

  1. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix thoroughly.
  2. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; lumps are okay.
  4. Preheat your griddle or skillet to medium heat at about 350°F (177°C).
  5. Lightly grease the skillet with butter or oil.
  6. Pour about 1/4 cup of batter for each pancake onto the hot skillet.
  7. Cook until bubbles form on the surface and the edges are set, about 2-3 minutes.
  8. Flip the pancakes gently and cook for another 1-2 minutes, until golden brown.
  9. Remove pancakes from the skillet and serve immediately with toppings of choice.

Notes

Make sure your griddle is hot enough before adding batter to achieve a golden crust. Let the batter rest for a few minutes to aerate for fluffier pancakes.
