Ingredients

Main
  • 2 cups mashed potatoes preferably Russet
  • 1 cup all-purpose flour plus more for dusting
  • 1 large egg
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Equipment

  • Large pot
  • Mixing bowl
  • Fork or potato masher
  • Floured surface for rolling
  • Knife or bench scraper
  • Cooking spoon

Method

  1. Begin by boiling the potatoes in salted water until they are fork-tender.
  2. Once cooked, drain the potatoes and mash them until smooth.
  3. In a mixing bowl, combine the mashed potatoes with flour, egg, salt, and pepper.
  4. Mix until a dough forms, but do not overwork it.
  5. On a floured surface, divide the dough into manageable pieces.
  6. Roll each piece into a long rope about ½ inch thick.
  7. Using a knife or bench scraper, cut the ropes into 1-inch pieces.
  8. Use a fork to gently press each piece to create ridges.
  9. Bring a large pot of salted water to a boil.
  10. Add the gnocchi and cook until they float to the top, about 2 minutes.
  11. Once cooked, use a slotted spoon to transfer the gnocchi to a serving dish.

Notes

Gnocchi pairs beautifully with a variety of sauces like marinara, brown butter sage, or pesto.
