Ingredients

Main
  • 1 medium head of red cabbage finely shredded
  • 1 medium onion chopped
  • 2 tablespoons butter
  • 1 cup apple cider vinegar
  • 1 cup apple juice
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground allspice
  • 1 bay leaf

Equipment

  • Large pot or Dutch oven
  • Cutting board
  • Sharp knife
  • Wooden spoon
  • Measuring cups and spoons

Method

  1. Remove the outer leaves of the cabbage, cut it into quarters, remove the core, and finely shred the cabbage.
  2. Chop the onion into small pieces.
  3. Melt the butter in a large pot or Dutch oven over medium heat, add the chopped onion, and sauté until translucent, about 5 minutes.
  4. Add the shredded cabbage to the pot and stir well to combine with the onions.
  5. Pour in the apple cider vinegar and apple juice, stirring to coat the cabbage.
  6. Add the brown sugar, salt, pepper, ground allspice, and bay leaf, and stir until evenly mixed.
  7. Cover the pot, reduce heat to low, and simmer for 45 minutes, stirring occasionally.
  8. Taste the cabbage, adjust seasoning if necessary, remove the bay leaf, and serve.

Notes

Let the cabbage sit for a few hours or overnight in the fridge; flavors will deepen and improve.
