Ingredients

Main
  • 2 lbs chicken thighs skinless and boneless, cut into pieces
  • 2 cups long-grain rice
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 1 red bell pepper chopped
  • 2 cups chicken broth
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley chopped, for garnish

Equipment

  • Large pot or Dutch oven
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Sharp knife and cutting board
  • Serving spoon

Method

  1. Start by chopping the onion, garlic, and red bell pepper.
  2. In your pot, heat olive oil over medium-high heat. Sear the chicken pieces until golden brown.
  3. Add the chopped onion, garlic, and red bell pepper to the pot. Sauté until softened.
  4. Sprinkle in the turmeric, paprika, salt, and pepper.
  5. Stir in the rice, ensuring it’s coated with the spices and oil. Then, pour in the chicken broth.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30 minutes.
  7. After 30 minutes, check if the rice is tender and the chicken is cooked through.
  8. Once cooked, fluff the rice with a fork and sprinkle with fresh parsley.

Notes

Letting the dish rest for a few minutes before serving allows the flavors to meld even more.
