Ingredients

Main
  • 1 pound smelt cleaned and scaled
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • Oil for frying vegetable or canola

Equipment

  • Deep fryer or large heavy pot
  • slotted spoon
  • Paper towels
  • Mixing bowl
  • Plate for serving

Method

  1. Rinse the smelt under cold water and pat them dry with paper towels.
  2. In a mixing bowl, combine the flour, salt, pepper, and garlic powder.
  3. In your deep fryer or pot, heat about 2 inches of oil to 350°F.
  4. Coat each smelt in the seasoned flour, shaking off any excess.
  5. Carefully place the coated smelt into the hot oil, frying in batches if necessary.
  6. Fry the smelt for about 3-4 minutes per side, or until they are golden brown and crispy.
  7. Using a slotted spoon, transfer the fried smelt to a plate lined with paper towels.
  8. Serve the fried smelt hot with your favorite dipping sauce or a squeeze of lemon.

Notes

For an even crispier texture, double-dip the smelt by coating them in flour, then dipping in beaten egg, and coating with flour again.
