Ingredients

Main
  • 4 large potatoes peeled and cut into wedges
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • Salt to taste
  • Pepper to taste

Equipment

  • Large pot or deep fryer
  • slotted spoon
  • Paper towels
  • Cutting board
  • Knife

Method

  1. Start by peeling and cutting the potatoes into wedges.
  2. Rinse the cut potatoes under cold water to remove excess starch, then soak them in cold water for about 30 minutes.
  3. In a large pot or deep fryer, heat the olive oil over medium-high heat until it reaches 350°F.
  4. Once soaked, drain the potatoes and pat them dry with paper towels.
  5. Carefully add the potatoes to the hot oil in batches, and fry for about 5-7 minutes or until they turn golden brown, flipping them halfway through.
  6. Once cooked, remove the potatoes with a slotted spoon and place them on paper towels to drain excess oil.
  7. While still hot, sprinkle them with salt, pepper, and dried oregano.
  8. Drizzle the lemon juice over the hot potatoes immediately after seasoning.
  9. Serve the Fried Greek Potatoes warm.

Notes

These potatoes are best enjoyed fresh for maximum crispiness.
