Ingredients

Main
  • 4 large onions thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 8 cups beef broth
  • 1 cup dry white wine
  • 1 teaspoon thyme dried
  • 1 bay leaf
  • Salt and pepper to taste
  • 8 slices of French bread toasted
  • 2 cups Gruyère cheese shredded

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Sharp knife
  • Cutting board
  • Broiler-safe bowls

Method

  1. Thinly slice 4 large onions.
  2. In a large pot or Dutch oven, melt 3 tablespoons butter with 1 tablespoon olive oil over medium heat. Add the sliced onions and 1 teaspoon sugar, stirring often for 10-15 minutes until soft and translucent.
  3. Reduce heat to low and continue to cook the onions for 30-40 minutes, stirring occasionally, until they are deeply caramelized.
  4. Pour in 8 cups beef broth and 1 cup dry white wine to deglaze the pot, scraping up any browned bits.
  5. Add 1 teaspoon dried thyme, 1 bay leaf, and season with salt and pepper to taste.
  6. Bring the soup to a simmer and cook for 15-20 minutes to allow flavors to meld.
  7. While the soup simmers, preheat your broiler and toast 8 slices of French bread until golden brown.
  8. Ladle the hot soup into broiler-safe bowls, top each with a slice of toasted bread, and sprinkle with shredded Gruyère cheese.
  9. Place the bowls under the broiler for 2-3 minutes or until the cheese is bubbly and golden.

Notes

For an even richer flavor, add a splash of sherry or brandy before serving.
