Ingredients

Main
  • 1 cup dried chickpeas soaked overnight
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh cilantro chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking powder
  • Salt and pepper to taste
  • Oil for frying

Equipment

  • Food processor
  • Mixing bowl
  • Frying pan or deep fryer
  • slotted spoon
  • Paper towels

Method

  1. Drain and rinse the soaked chickpeas to remove any excess salt or preservatives.
  2. In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until you have a coarse mixture.
  3. Transfer the mixture to a bowl and refrigerate for about 30 minutes.
  4. Using your hands, form the mixture into small balls or patties, about the size of a golf ball.
  5. In a frying pan, heat about an inch of oil over medium heat.
  6. Carefully add the falafel to the hot oil, frying in batches for about 3-4 minutes per side until golden brown.
  7. Use a slotted spoon to remove the falafel from the oil and transfer them to a plate lined with paper towels.
  8. Serve the falafel warm with your choice of sauces or toppings.
