Ingredients

Main
  • 1 cup whole wheat berries
  • 1 cup whole barley
  • 1 cup whole spelt
  • 1 cup whole millet
  • 1/2 cup lentils
  • 1/2 cup kidney beans soaked overnight
  • 4 cups water for soaking and sprouting
  • 1 tablespoon sea salt
  • 2 tablespoons honey or agave syrup
  • 1 tablespoon olive oil

Equipment

  • Large bowl
  • Sprouting jar or mesh strainer
  • Blender or food processor
  • Baking pan
  • Kitchen towel
  • Oven

Method

  1. Rinse all grains and legumes under cool water to remove impurities.
  2. Place rinsed grains in a large bowl and cover with water; let soak overnight.
  3. Drain water using a mesh strainer or sprouting jar and rinse grains thoroughly.
  4. Leave drained grains in a jar covered with a cloth and let sit in a warm area, rinsing and draining every 8 hours for about 24 hours until sprouted.
  5. Transfer sprouted grains to a blender or food processor and blend until smooth, adding water as necessary to achieve a thick batter consistency.
  6. In a bowl, combine the blended mixture with honey, olive oil, and sea salt; stir until well incorporated.
  7. Preheat oven to 350°F (175°C) and grease the baking pan with olive oil.
  8. Pour the mixture into the prepared pan and smooth the top; bake for about 60 minutes, or until firm and a toothpick comes out clean.
  9. Let the bread cool completely before slicing.

Notes

This bread pairs beautifully with a variety of toppings and sides, like avocado or almond butter.
