Ingredients

Main
  • 1 cup jasmine or basmati rice
  • 1 3/4 cups vegetable or chicken broth
  • 1 cup shelled edamame fresh or frozen
  • 2 tablespoons sesame oil
  • 2 teaspoons soy sauce
  • 1 teaspoon sesame seeds
  • 2 green onions chopped

Equipment

  • Medium saucepan
  • Colander
  • Fork for fluffing rice
  • Measuring cups and spoons
  • Wooden spoon or spatula

Method

  1. Start by rinsing the rice under cold water until the water runs clear.
  2. In a medium saucepan, bring the broth to a boil over medium heat.
  3. Once boiling, stir in the rinsed rice and give it a quick stir to ensure even cooking.
  4. Reduce the heat to low and cover the saucepan. Let it simmer for about 15 minutes until the rice absorbs the broth.
  5. While the rice cooks, steam the edamame in a separate pot for about 5 minutes if fresh, or heat frozen edamame according to package instructions.
  6. After 15 minutes, remove the saucepan from the heat and let it sit covered for 5 minutes.
  7. Fluff the rice gently with a fork.
  8. Add the steamed edamame, sesame oil, and soy sauce to the rice. Stir gently to combine.
  9. Transfer the rice to a serving bowl and sprinkle with sesame seeds and chopped green onions.

Notes

For an extra flavor kick, add a splash of rice vinegar or a sprinkle of chili flakes when serving.
