Ingredients

Main
  • 1 cup cooked quinoa
  • 1 can black beans drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/2 cup corn frozen or fresh
  • 1/2 onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil for cooking
  • Buns for serving
  • Your favorite toppings lettuce, tomato, avocado, etc.

Equipment

  • Large mixing bowl
  • Skillet
  • Spatula
  • Measuring cups and spoons
  • Food processor (optional)

Method

  1. Start by cooking the quinoa according to package instructions.
  2. In a skillet, heat a bit of olive oil and sauté the onions and garlic until softened.
  3. In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth.
  4. Add the cooked quinoa, sautéed vegetables, corn, breadcrumbs, and spices into the bowl with the mashed beans.
  5. Shape the mixture into 4 equal patties.
  6. In the same skillet, heat a tablespoon of olive oil over medium heat.
  7. Add the patties to the skillet and cook for about 5-7 minutes on each side until golden brown.
  8. Place the cooked patties on buns and add your favorite toppings.

Notes

Don’t skip the spices; they amplify flavor immensely. Let the mixture rest for a few minutes before forming patties for better binding.
