Ingredients

Main
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 can 28 ounces crushed tomatoes
  • 4 cups beef broth
  • 2 teaspoons Italian seasoning
  • 8 ounces campanelle or other short pasta
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh basil for garnish optional

Equipment

  • Large pot or Dutch oven
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Cutting board and knife
  • Bowl for mixing cheese

Method

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the chopped onion until translucent, about 3-4 minutes; add garlic in the last minute.
  3. Add the ground beef, breaking it apart with a spoon and cooking until browned, about 5-7 minutes.
  4. Stir in crushed tomatoes and beef broth, scraping any browned bits from the bottom.
  5. Add Italian seasoning, salt, and pepper to taste.
  6. Bring the soup to a boil, then add the pasta, reducing to a simmer and cooking for 8-10 minutes.
  7. In a bowl, mix ricotta cheese with a pinch of salt and pepper.
  8. Once the pasta is tender, stir in the ricotta mixture until well combined and simmer for an additional 2-3 minutes.
  9. Serve the soup hot, garnished with shredded mozzarella and fresh basil if desired.

Notes

For extra flavor, sprinkle with grated Parmesan cheese before serving.
