- In a small bowl, whisk together 3 tablespoons soy sauce, 2 tablespoons rice vinegar, 1 tablespoon brown sugar, 1 tablespoon sesame oil, 1/4 cup water, and 1/4 teaspoon red pepper flakes.
- Mince 4 cloves of garlic and 1 tablespoon of ginger, and slice 3 green onions, keeping white parts separate from green tops.
- Heat a large skillet over medium-high heat and add 2 tablespoons vegetable oil, heating for about 1 minute until hot.
- Add 1.5 pounds ground pork, breaking it into pieces, and cook for 8-10 minutes until fully browned with no pink remaining.
- Push the pork to the sides of the skillet, add minced garlic and ginger to the center, and cook for 30 seconds until fragrant.
- Stir the garlic and ginger into the pork until evenly distributed.
- Pour the prepared sauce over the pork and stir to coat all the meat.
- Reduce heat to medium and simmer for 3-4 minutes until the sauce reduces and becomes glossy.
- Taste and adjust seasoning with salt, black pepper, or extra soy sauce as needed.
- Remove from heat and sprinkle sliced green onion tops over the pork before serving.
Notes
Leftovers can be refrigerated for up to four days or frozen for up to three months. Reheat gently, adding a splash of water or soy sauce if the dish seems dry.
