Ingredients

Main
  • 4 large poblano peppers
  • 1 cup shredded cheese Monterey Jack or Cheddar
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup milk
  • Salt and pepper to taste
  • Cooking oil for frying

Equipment

  • Baking sheet
  • Aluminum foil
  • Mixing bowl
  • Whisk
  • Skillet
  • Spatula

Method

  1. Preheat your oven to 400°F (200°C).
  2. Place the poblano peppers on a baking sheet and roast them in the oven for about 20 minutes.
  3. While the peppers roast, mix the shredded cheese in a bowl.
  4. Once the peppers are charred, remove them from the oven and cover them with aluminum foil for 10 minutes.
  5. Peel the skin off the steamed peppers.
  6. Carefully make a slit in each pepper and remove the seeds. Stuff each pepper with the cheese mixture.
  7. In a mixing bowl, whisk together the flour, eggs, milk, salt, and pepper until smooth.
  8. In a skillet, heat about an inch of cooking oil over medium heat.
  9. Dip each stuffed pepper into the batter, then carefully place it in the hot oil. Fry for about 3-4 minutes on each side until golden brown.
  10. Once fried, place the chiles on a paper towel to drain excess oil. Serve hot.

Notes

Top with salsa verde for a tangy touch, or serve with sour cream and Mexican rice.
