Ingredients

Main
  • 200 grams spaghetti
  • 100 grams Pecorino Romano cheese finely grated
  • 1 tablespoon freshly cracked black pepper
  • Salt for pasta water
  • Olive oil optional for drizzling

Equipment

  • Large pot for boiling pasta
  • Skillet or large frying pan
  • Colander for draining pasta
  • Tongs or pasta fork
  • Grater for cheese

Method

  1. Start by bringing a large pot of salted water to a boil.
  2. Add the spaghetti to the boiling water and cook according to package instructions until al dente, stirring occasionally.
  3. Before draining the pasta, reserve about a cup of the starchy cooking water.
  4. Drain the spaghetti in a colander, shaking off excess water.
  5. In the same skillet, add the cracked black pepper and toast it over medium heat for about 1 minute.
  6. Add the drained spaghetti to the skillet with the toasted pepper and toss to combine.
  7. Gradually sprinkle in the grated Pecorino Romano cheese while tossing the pasta, adding reserved pasta water a little at a time until you achieve a creamy consistency.
  8. Plate the pasta and drizzle with olive oil if desired. Serve immediately.

Notes

For an extra layer of flavor, add a touch more cheese and a final sprinkle of black pepper just before serving.
