Ingredients

Main
  • 1 cup pearl barley
  • 3 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Equipment

  • Medium saucepan
  • Stirring spoon
  • Measuring cups and spoons
  • Colander

Method

  1. Rinse the pearl barley under cold water to remove any impurities.
  2. In a medium saucepan, bring the vegetable or chicken broth to a boil over medium-high heat.
  3. In another pan, heat the olive oil over medium heat.
  4. Add the diced onion and sauté until translucent, about 3-4 minutes.
  5. Stir in the minced garlic and cook for another minute.
  6. Add the rinsed barley to the saucepan with boiling broth.
  7. Reduce the heat to low and cover the saucepan. Let it simmer for about 30 minutes until the barley is tender and the liquid is absorbed.
  8. Once cooked, remove from heat and season with salt and pepper to taste.
  9. Fluff the barley with a fork to separate the grains.
  10. Transfer the barley to a serving dish and sprinkle with fresh parsley.

Notes

For extra flavor, toast the barley in the pan before adding the broth.
