Ingredients

Main
  • 1 lb pork shoulder or belly
  • 1 onion chopped
  • 2 green chilies sliced
  • 1/2 cup mayonnaise
  • 1/4 cup vinegar
  • 2 tbsp soy sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp calamansi juice or lemon juice

Equipment

  • Grill or grill pan
  • Mixing bowl
  • Sharp knife
  • Cutting board
  • Meat thermometer

Method

  1. Start by cutting the pork into bite-sized pieces.
  2. Preheat your grill to medium-high. Grill the pork pieces for 15-20 minutes until nicely charred and cooked through.
  3. Remove the pork from the grill and let it rest for a few minutes.
  4. Once cooled, chop the grilled pork into smaller pieces.
  5. In a mixing bowl, combine mayonnaise, vinegar, soy sauce, salt, black pepper, and calamansi juice.
  6. Add the chopped pork, onions, and green chilies to the sauce. Toss until well coated.
  7. Let the mixture chill in the refrigerator for about 10-15 minutes.
  8. Serve the Dinakdakan on a platter, garnished with extra green chilies if desired.

Notes

For the best flavor, let the Dinakdakan sit for a few hours before serving.
