Ingredients

Main
  • 2 lbs beef chuck cut into 1-inch cubes
  • 2 tbsp vegetable oil
  • 2 onions chopped
  • 4 cloves garlic minced
  • 2 tbsp sweet paprika
  • 1 tsp caraway seeds
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper optional
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 2 bell peppers chopped
  • 2 bay leaves
  • Salt to taste

Equipment

  • Large heavy-bottomed pot or Dutch oven
  • Wooden spoon
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons

Method

  1. In a large pot, heat the vegetable oil over medium-high heat. Brown the beef cubes on all sides for about 10-15 minutes.
  2. Add the chopped onions to the pot and sauté until they are translucent, about 5 minutes.
  3. Stir in the minced garlic, paprika, caraway seeds, black pepper, and cayenne. Cook for 1-2 minutes.
  4. Pour in the beef broth and add the tomato paste. Stir to combine.
  5. Add the chopped bell peppers and bay leaves to the pot.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 hours.
  7. After simmering, taste and adjust the seasoning with salt as needed.
  8. Remove the bay leaves and serve hot.

Notes

Serve with dumplings, bread, or over pasta. For extra flavor, let goulash rest for a few hours or overnight before serving.
