  • 4 large eggs
  • 2 cups shredded mozzarella cheese
  • 1/2 cup pizza sauce or marinara
  • 1/4 cup grated Parmesan cheese
  • 1 cup pepperoni slices
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • salt and black pepper to taste
  • 1 tablespoon olive oil

Method
 

  1. Preheat the oven to 425°F (220°C) and allow it to heat for 5 minutes.
  2. Brush a 9-inch round baking dish with olive oil, coating the bottom and sides evenly.
  3. In a large mixing bowl, whisk together 4 large eggs, 1/2 teaspoon garlic powder, 1 teaspoon Italian seasoning, salt, and black pepper until combined.
  4. Fold in 2 cups shredded mozzarella cheese and 1/4 cup grated Parmesan cheese until no dry cheese remains.
  5. Pour the egg and cheese mixture into the prepared pan and spread it into a uniform 1/2-inch layer.
  6. Spread 1/2 cup pizza sauce evenly over the egg base, leaving a 1/2-inch border around the edges.
  7. Arrange 1 cup pepperoni slices evenly over the sauce.
  8. Bake for 12 to 15 minutes until the edges are golden brown and the cheese is bubbling.
  9. Allow the pizza to rest for 2 to 3 minutes before slicing to let the base set.

Notes

Leftovers can be refrigerated for up to 4 days or frozen for up to 2 months; reheat slices in a 350°F oven for 5 to 8 minutes for best texture.
