Method
- Preheat the oven to 425°F (220°C) and allow it to heat for 5 minutes.
- Brush a 9-inch round baking dish with olive oil, coating the bottom and sides evenly.
- In a large mixing bowl, whisk together 4 large eggs, 1/2 teaspoon garlic powder, 1 teaspoon Italian seasoning, salt, and black pepper until combined.
- Fold in 2 cups shredded mozzarella cheese and 1/4 cup grated Parmesan cheese until no dry cheese remains.
- Pour the egg and cheese mixture into the prepared pan and spread it into a uniform 1/2-inch layer.
- Spread 1/2 cup pizza sauce evenly over the egg base, leaving a 1/2-inch border around the edges.
- Arrange 1 cup pepperoni slices evenly over the sauce.
- Bake for 12 to 15 minutes until the edges are golden brown and the cheese is bubbling.
- Allow the pizza to rest for 2 to 3 minutes before slicing to let the base set.
Notes
Leftovers can be refrigerated for up to 4 days or frozen for up to 2 months; reheat slices in a 350°F oven for 5 to 8 minutes for best texture.
