Ingredients

Main
  • 3-4 pounds beef short ribs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 1 cup beef broth
  • 1 cup red wine or additional beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 sprigs fresh rosemary or 1 teaspoon dried
  • 2 sprigs fresh thyme or 1 teaspoon dried

Equipment

  • Crock pot
  • Skillet
  • Tongs
  • Measuring cups and spoons
  • Wooden spoon

Method

  1. Generously season the short ribs with salt and black pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear the ribs on all sides until nicely browned, about 2-3 minutes per side.
  4. In the same skillet, add chopped onion and minced garlic, sautéing until softened, about 3-4 minutes.
  5. Transfer the browned ribs to the crock pot.
  6. Pour in the sautéed onions and garlic along with beef broth, red wine, Worcestershire sauce, and herbs.
  7. Cover the crock pot and set it to low for 8 hours.
  8. After 8 hours, check that the ribs are tender and easily pull away from the bone.
  9. If they are not tender, let them cook for an additional hour.
  10. Transfer the cooking liquid to a saucepan and simmer until reduced if you prefer a thicker sauce.
  11. Plate the short ribs and drizzle with the sauce.

Notes

Serve with sides like mashed potatoes or crusty bread for a complete meal.
