Ingredients

Main
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs
  • 1 cup pineapple chunks drained
  • 1 bell pepper chopped (red or green)
  • 1/2 cup sugar
  • 1/2 cup vinegar white or rice vinegar
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger

Equipment

  • Baking sheet or frying pan
  • Mixing bowls
  • Whisk
  • Meat thermometer
  • Spatula or tongs

Method

  1. Start by cutting the chicken into bite-sized pieces.
  2. In three separate bowls, place flour, beaten eggs, and breadcrumbs.
  3. Dip each chicken piece into the flour, then the eggs, and finally coat with breadcrumbs.
  4. Preheat your oven to 400°F (200°C) if baking, or heat oil in a pan over medium heat if frying.
  5. For baking, place the chicken on a baking sheet and drizzle with a little oil. Bake for 20-25 minutes until golden brown.
  6. For frying, cook each piece for 4-5 minutes on each side until fully cooked.
  7. In a saucepan, combine sugar, vinegar, soy sauce, garlic powder, and ginger. Heat over medium until sugar dissolves.
  8. Add the cornstarch-water mixture to the sauce while stirring to thicken.
  9. Once the chicken is cooked, toss it with the sauce, pineapple, and bell pepper.
