- Gently wipe each mushroom clean with a damp paper towel, trim stems if needed, and halve each mushroom.
- In a shallow dish, combine flour, salt, black pepper, garlic powder, and cayenne pepper.
- In another bowl, whisk eggs and milk until smooth.
- Heat vegetable oil in a heavy-bottomed pot or deep skillet to 350°F (175°C).
- Dip each mushroom half into the egg mixture, then dredge in the seasoned flour, shaking off excess.
- Working in batches, carefully add 5 to 7 mushrooms to the hot oil and fry undisturbed for 2 to 3 minutes until golden brown.
- Flip with a slotted spoon and fry the other side for 1 to 2 minutes until crispy.
- Transfer fried mushrooms to a plate lined with paper towels to drain excess oil and immediately sprinkle with salt.
- If not serving immediately, keep warm in a 200°F (95°C) oven until all batches are fried.

Serve fried mushrooms immediately for peak crispiness, or keep warm in the oven at 200°F until ready to serve.
