  • 1 pound fresh mushrooms cleaned and halved (cremini, button, or mixed varieties)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup whole milk or water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper optional
  • 2 cups vegetable oil for frying or enough to reach 2 inches in your pot

Method
 

  1. Gently wipe each mushroom clean with a damp paper towel, trim stems if needed, and halve each mushroom.
  2. In a shallow dish, combine flour, salt, black pepper, garlic powder, and cayenne pepper.
  3. In another bowl, whisk eggs and milk until smooth.
  4. Heat vegetable oil in a heavy-bottomed pot or deep skillet to 350°F (175°C).
  5. Dip each mushroom half into the egg mixture, then dredge in the seasoned flour, shaking off excess.
  6. Working in batches, carefully add 5 to 7 mushrooms to the hot oil and fry undisturbed for 2 to 3 minutes until golden brown.
  7. Flip with a slotted spoon and fry the other side for 1 to 2 minutes until crispy.
  8. Transfer fried mushrooms to a plate lined with paper towels to drain excess oil and immediately sprinkle with salt.
  9. If not serving immediately, keep warm in a 200°F (95°C) oven until all batches are fried.

Serve fried mushrooms immediately for peak crispiness, or keep warm in the oven at 200°F until ready to serve.
