Ingredients

Main
  • 1 pound fresh asparagus trimmed and cut into pieces
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Equipment

  • Large pot
  • Blender or immersion blender
  • Cutting board
  • Knife
  • Measuring cups and spoons

Method

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onions become translucent, about 5 minutes.
  3. Stir in the asparagus pieces and cook for another 5 minutes.
  4. Add the vegetable or chicken broth to the pot. Bring it to a boil, then reduce the heat and let it simmer for 15 minutes.
  5. Once the asparagus is tender, use an immersion blender to purée the soup until smooth.
  6. Stir in the heavy cream and heat the soup gently.
  7. Season the soup with salt and pepper. Taste and adjust the seasoning as needed.
  8. Serve the soup hot, garnished with a drizzle of cream or a sprinkle of asparagus tips.

Notes

Serve with crusty bread or a fresh salad.
