- Step 1: Soften your cream cheese - let 8 ounces of cream cheese sit at room temperature for about 15 minutes.
- Step 2: Combine cream cheese and butter - beat together cream cheese and 2 tablespoons butter on medium speed for 2 minutes until light and fluffy.
- Step 3: Add powdered sugar - sift in 2 cups powdered sugar gradually, mixing on low speed and scraping down sides until fully incorporated.
- Step 4: Incorporate peppermint extract - add 1/2 teaspoon peppermint extract and mix on medium speed for 30 seconds until uniform.
- Step 5: Add food coloring if desired - mix in 2 to 3 drops until the desired color is achieved.
- Step 6: Chill the mixture - refrigerate the mint mixture for at least 30 minutes until firm enough to shape.
- Step 7: Roll into balls - scoop bite-sized portions with a melon baller or spoon and roll between your palms into 1/2 inch balls.
- Step 8: Final refrigeration - place on a parchment-lined baking sheet and chill for at least 2 hours until firm.
Notes
Store finished mints in an airtight container with parchment paper between layers. Keep refrigerated for up to two weeks or freeze for up to three months.
