  • 2 cups 16 ounces cottage cheese, drained well
  • 1 cup 240 ml heavy whipping cream, cold
  • 1/4 cup 50 grams granulated sugar
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon fine sea salt
  • 1/2 teaspoon lemon zest optional but recommended

Method
 

  1. Drain the cottage cheese in a fine mesh sieve for 5 minutes, stirring occasionally.
  2. Blend the drained cottage cheese in a blender until completely smooth, about 30 seconds.
  3. Whip the cold heavy cream with an electric mixer on medium-high speed until soft peaks form, about 2 to 3 minutes.
  4. Fold the smooth cottage cheese with granulated sugar, vanilla extract, salt, and lemon zest until well combined.
  5. Taste the mixture and adjust sweetness by adding more sugar if needed.
  6. Gently fold the whipped cream into the cottage cheese mixture in two additions until just combined.
  7. Divide the mousse among serving glasses, filling each about three-quarters full.
  8. Refrigerate the mousse for at least 30 minutes before serving.

Notes

Best served chilled within a few hours; cover and refrigerate, and add toppings like fresh berries or a drizzle of honey just before serving.
