- Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on two sides.
- Blend 1 cup of cottage cheese in a blender or food processor for 1 to 2 minutes until completely smooth with no lumps.
- In a medium bowl, whisk together 3/4 cup unsweetened cocoa powder, 2/3 cup all-purpose flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt until well combined.
- In a large bowl, whisk the blended cottage cheese with 2 large eggs, 1/4 cup vegetable oil, and 1 teaspoon vanilla extract until smooth.
- Stir in 1/2 cup granulated sugar and 1/4 cup brown sugar into the wet mixture until no granules remain visible.
- Fold the dry ingredients into the wet ingredients gently with a rubber spatula until just combined and no streaks remain.
- Fold in 1/2 cup dark chocolate chips and pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 22 to 26 minutes, until a toothpick inserted in the center comes out with a few moist crumbs attached.
- Cool the brownies in the pan on a wire rack for at least 30 minutes before slicing.
Notes
Chill the brownies in the refrigerator for 2 hours before slicing for the cleanest cuts and most fudgy texture.
