- Preheat the oven to 350°F and lightly butter a 9x13-inch baking dish.
- Break up the cornbread into bite-sized crumbles and spread evenly in the prepared baking dish.
- Melt butter in a skillet over medium heat, add diced onion, and cook for 4 to 5 minutes until translucent.
- Add fresh or frozen corn kernels to the skillet and cook for 2 minutes, then stir in cream-style corn.
- In a medium bowl, whisk together milk and eggs until smooth and uniform.
- Pour the milk and egg mixture into the skillet, add salt, black pepper, garlic powder, and cayenne pepper, and whisk to combine.
- Pour the corn custard mixture over the cornbread, stir gently with a fork to moisten all crumbs.
- Bake for 50 to 60 minutes at 350°F, until the top is golden brown and a toothpick comes out clean or with a few moist crumbs.
- Let the cornbread pudding rest for 10 minutes before serving to allow the custard to set.
