Ingredients

Main
  • 4 boneless skinless chicken breasts
  • 4 slices of ham
  • 4 slices of Swiss cheese
  • 1 cup of all-purpose flour
  • 2 large eggs
  • 1 cup of breadcrumbs
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Equipment

  • Meat mallet or rolling pin
  • Shallow bowls
  • Skillet
  • Baking dish
  • Cooking thermometer

Method

  1. Begin by placing the chicken breasts between two sheets of plastic wrap.
  2. Using a meat mallet or rolling pin, gently pound the chicken until it is about 1/2 inch thick.
  3. Sprinkle salt and pepper on both sides of the chicken.
  4. Place a slice of ham and a slice of Swiss cheese on each chicken breast.
  5. Carefully roll each chicken breast tightly, securing the filling inside.
  6. Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
  7. Dredge each chicken roll first in flour, then dip in egg, and finally coat with breadcrumbs.
  8. Heat olive oil in a skillet over medium heat.
  9. Cook the chicken rolls until golden brown on all sides, about 3-4 minutes per side.
  10. Transfer the chicken to a baking dish and bake in a preheated oven at 375°F for 15-20 minutes until cooked through.

Notes
